Large cardamom (“Queen of Spices” / “Black Gold”) is majorly grown in the eastern hills of Nepal also known as Alaichi. Nepal is the largest producer and exporter of large cardamom in the world. Nepal exports cardamom to countries such as India, Middle East, Pakistan and so on.

Large cardamom (Amomum Subulatum Roxb.), also called black cardamom, big cardamom of Nepal Cardamom in international spice market, is grown only in the sub-Himalayan region of Nepal, northeast India (mainly Sikkim) and Bhutan. The local name for the spice is Alainchii. It is called ‘Bara Elaichi’ in Hindi ( also in Bengali Punjabi and Urdu), Nepal cardamom in German and cardamom noir in French. It is used as a flavourant in dishes like pulau, biryani and meat preparations. It is an ingredient in bakery products, curry powder and spice masala mixtures, and also used in ayurvedic and unani medicines.

Everest Large Cardamom

Large cardamom (Amomum Subulatum Roxb.), also called black cardamom, big cardamom of Nepal Cardamom in international spice market, is grown only in the sub-himalayan region of Nepal, northeast india (mainly Sikkim) and Bhutan. The local name for the spice is Alainchii. It is called bara elaichi in hindi ( also in Bengali Punjabi and urdu), nepal cardamom in german and cardamom noir in French. It is used as a flavourant in dishes like pulau, biryani and meat preparations. It is an ingredient in bakery products, curry powder and spice masala mixtures, and also used in ayurvedic and unani medicines.

Large cardamom plants grow in the vicinity of mountain streams in swampy, cool, and humid areas in the shade of forest trees. It grows well at altitude ranging from 1000 to 2000m amsl, and in areas with an annual rainfall varying from 2000 to 3500mm. It is a perennial bush having a sheathed stem which may reach up to 1.5 to 2.5m in height. It has a large tuberous rhizome and leaves of about 30-60cm length and 5-10 cm width. The trailing leafy stalk which grows from the base of the plant at ground level bears the speed pod. Some of its popular cultivars include ramsey, golsey and verlangey.

Nepal, with share of 52 percent, is the largest producer of large cardamom, followed by India (37%),and Bhutan (11%). India is the main market for large cardamom production in Nepal; c about 90 percent of production is being exported to India. Half of Nepali large cardamom exported to India is re-exported to other countries (Pakistan, Bangladesh, Gulf countries, and others).

Fully matured capsules are harvested during September to November. The primary processing steps required are curing (drying), tail cutting and grading. Curing is carried out by farmers, and the remaining steps are done by wholesalers upon collection from farmers. Curing is the most crucial step in processing as capsule quality Iargely depends on curing conditions and methods. Dried capsules are usually packed in polythene-lined jute bags for storage at 11 % moisture content.
